What's for Lunch?



I often try new recipes and want to just get out of a rut and try something new. Lunch is usually my best time to play with foods because the kids are at school, hubby is at work. I still do have my newest little one, Meadow, but I consider her my "cooking show" audience!
I was really in the mood with carrots this morning. I just love the filling sweetness, did I mention no fat and low calories.



This veggie deserves to be a star of a dish and embellished. I started by cutting the ends and washing the extra dirt. It really brought out the orange. Put them in a baking dish lined with aluminum foil. I did this for the fact of cooking is something I love, dishes are not! Sprayed the foil with Pam for a no stick insurance. Generously coated with EVOO and salt and peppered. Then covered with another sheet of aluminum foil. Popped into a preheated oven of 400F.

This took about 30-40 minutes. I wanted them cooked through but still firm. After taking them out I put on a cutting board and cut them in half and took a rolling pin and semi flattened them.

Made an assembly line of egg wash and Kraft Fresh Take Chili Lime & Panko Mix, Coat, Bake. I took each carrot and ran them through my assembly of goodness. After dressing the carrots in their panko goodness I put them in a medium high heat pan with EVOO once again in the pan. Let them cook on each side about 4-7 minutes. Depends on the stove. I put on a plate after cooking on each side, salted just a bit and put the cheese from the Kraft Fresh Take on top. Oh My Goodness it is so good! I ate this for lunch alone but I think for a side item this would be such a pleaser for the kiddos. I am adding this to my Thanksgiving menu. Yes it has that quality to it. Also there are so many ways you could go with this recipe. I'm thinking other veggies such as cauliflower or broccoli. Maybe my next blog post, right!
